It’s really not easy to bake a nut cake that is fluffy and moist at the same time. Often nut cakes become so dry after baking that you have to wash them down with tea or coffee or add a large portion of cream.


This is definitely not the case with our almond cake. We use cream instead of butter for our dough – and it ensures that the cake is nice and fluffy and moist. We also top the almond cake with a thick layer of caramelized almond flakes, which make the cake extra-juicy. Here comes the recipe.
 

Juicy almond cake: Simple recipe


An almond cake like this certainly takes a lot of time and is elaborate, you think? You thought wrong. Because our super moist almond cake is ready in just 30 minutes. It’s also perfect for baking beginners, as it’s really easy to prepare. All you have to do is mix together the ingredients for the dough and the ingredients for the almond topping and you’re done!

And this is how it works :

  1. First put the cream and then the sugar into a bowl. Then use the empty cup of cream to measure out the amount of flour. Add two cups of flour to the bowl as well as the eggs, baking powder, vanilla sugar and a pinch of salt. Mix the dough together using a hand mixer.
  2. Place the dough on a baking tray lined with baking paper and bake in a preheated oven at 200°C for about 10 minutes.
  3. In the meantime, make the almond paste. Put the butter, sugar, almonds and milk in a saucepan and bring to the boil until the mixture thickens slightly.
  4. Remove the tray from the oven and pour the almond mixture over the pastry. Then return the tray to the oven and bake for a further 15-20 minutes.
  5. Remove the tray from the oven, leave to cool, cut the cake into pieces and enjoy. So delicious!
