And believe me : this porridge idea tastes so sinfully good that you would never think it has little calorie, let alone is healthy. Especially the fruit and the oatmeal make this porridge recipe a real power breakfast. The oatmeal contains a lot of protein and also lots of valuable magnesium, iron and folic acid.
But one thing in advance: As with everything, the quantity of ingredients is of course very important for porridge. Because yes, for this recipe we use a little honey, which is mostly sugar. And there are also nuts. If you use too much of them, the low-calorie breakfast can quickly become a calorie trap.
To make sure that doesn’t happen to you, here are the quantities I always use. If you prepare your porridge without nuts, you’ll get about 340 calories per portion. With nuts, you have to add another 100 calories, depending on the amount.
Porridge with caramelized apples: simple recipe
If you are a fan of rice pudding and other warm desserts, you will love this recipe. In winter, my favorite way to make porridge is with caramelized apples and bananas. The caramel makes the apples and bananas really warm and juicy. A big pinch of cinnamon rounds off the breakfast perfectly and a few nuts provide the extra crunch.
Porridge tastes best to me when milk is used in the preparation. It makes everything so nice and creamy. My tip: I always mix the milk with a little water. That way I save a few calories. If you like, you can also use only water for the preparation. Personally, however, it tastes better with milk.
What you need :
For 1 portion
- 1 cup oat flakes, tender
- 1 cup of water
- 1 cup (vegetable) milk
- 2 tablespoons honey
- A little cinnamon
- 1 apple
- 1 banana
- Optional: nuts
And this is how it works :
- prepare a pot and pour in oatmeal, water and milk and stir briefly. Bring to a simmer over medium heat. Stir occasionally so that nothing burns. As soon as the porridge thickens, remove from the heat and sweeten with a tablespoon of honey.
- Peel the apple and cut it into small pieces. Heat a pan with a dash of water and then add the apple pieces. Your pan should have a good coating so that nothing burns. If not, you can use a little coconut oil to grease it.
- Allow the apples to sizzle until they are lightly browned and the water has evaporated. Then add a tablespoon of honey and wait until the whole thing caramelizes.
Important: I only use a little honey in this recipe to save calories. If you want the apples to caramelize even more, you can of course use a little more honey. - When the apples are almost ready, peel and slice the banana and add it to the apples in the pan. Stir everything once briefly and let the bananas get warm.
- Now pour the porridge into a bowl and top with the bananas and apples. Now add a generous amount of cinnamon on top of the fruit. If you like a little extra crunch, you can add some nuts at the end. So delicious!
Change up your winter porridge: Recipe with apple sauce
If you’re not so keen on caramelized fruit, but like apples all the more, then I can warmly recommend applesauce for porridge. The cold applesauce is an incredibly delicious contrast to the warm, creamy porridge. Of course, you don’t have to skimp on the cinnamon here either.
To keep your porridge healthy, you should make the applesauce yourself. It’s very easy and requires only a few ingredients. It’s best to make a large portion of applesauce and stock up on it, so you save a lot of time.
What you need :
- 1 kg apples
- 120 ml water
- 1/2 organic lemon (juice + zest)
- 1 vanilla pod (scraped out)
- Cinnamon
And this is how it works :
Peel and chop the apples. Put them in a pot with the water, lemon and vanilla and simmer on low heat for 10-20 minutes until the apples are nice and soft. Finally, refine with cinnamon. If you like your applesauce chunky, you can leave it as it is. If you prefer it fine, puree it with a hand blender.
Tip: If the applesauce is not sweet enough for you, you can refine it with agave syrup.
