You know those days when you just don’t know what to cook? Somehow we always have the same thing, but we also lack the desire to try out exotic recipes. In this case, a casserole is always a good idea.
The great thing about a casserole is that it is wonderfully versatile. You can simply use the vegetables of your choice, top it all with cheese and you have a meal that tastes delicious and fills you up.
Today we would like to introduce you to a potato casserole with broccoli and tomatoes. You only need a few ingredients for this casserole, it is quick to make and always a success.
Potato casserole: simple recipe with lots of cheese
Admittedly, this recipe is not necessarily one of the healthiest. But honestly, sometimes we just need soul food that tastes good. That’s why we use a lot of cheese in this potato casserole.
To make the casserole nice and creamy, we also make a sauce with sour cream and cream. The tomato paste in the sauce gives the dish a fruity note. The fresh tomatoes go perfectly with the potatoes and broccoli.
What you need :
For approx. 4 people
- 10 potatoes
- 1 broccoli
- 2 handfuls of cherry tomatoes
- 1 cup of cream
- 1 cup sour cream
- 1 egg
- 1 clove of garlic
- nutmeg
- paprika powder
- Tomato paste
- Salt and pepper
- 350 g crumbled cheese
And this is how it works :
- First peel and dice the potatoes and put them in a large pot of salted water. Then pre-cook for about 10 minutes. In the meantime, wash the broccoli and separate the florets. Add the broccoli to the pot with the potatoes 3 minutes before the end of the cooking time. You will need a fairly large pot. If you don’t have one, cook the broccoli in a separate pot. Both the broccoli and the potatoes should be undercooked, just slightly precooked.
- Now wash and halve the tomatoes.
- Now make the sauce. Mix the cream, sour cream and egg together. Finely chop the garlic and add it. Season with salt, pepper, paprika powder and a little nutmeg. If you like, you can also add some herbs (fresh or frozen – both are possible). Finish with a little tomato paste.
- Place the potatoes, broccoli and tomatoes in a casserole dish, pour over the sauce and top with plenty of cheese. We use 1.5 packets of grated cheese for this. If that’s too much, use just one packet. Gouda or Emmental, for example, go well with the potato casserole.
- Bake the casserole in a preheated oven at 200°C convection oven for about 15-20 minutes until the cheese is golden brown. Arrange on a plate and enjoy!
Tip for vegans: Of course, you can also make a vegan dish out of the potato casserole. Simply use vegan sprinkled cheese (the Simply cheese is really tasty). Instead of cream, sour cream and egg, use Soya Cuisine for the sauce. You need about 2 packets of this. Season the sauce well and it will taste at least as good as sour cream or cream.
