
Have you ever tried vanilla cake? If not, it’s high time you did. Here is an ingenious recipe for a fluffy vanilla cake.
Chocolate cake, nut cake or marble cake: You can find recipes for these classics everywhere. But have you ever heard of vanilla cake? Vanilla cake is often neglected – and quite wrongly, in our opinion.
Because vanilla cake is super moist, fluffy and quick to make. We’ll tell you how to make it.
Vanilla cake: Simple recipe
If you like vanilla, you’ll love vanilla cake. For our recipe, we use a full dose of vanilla: vanilla custard powder, a cup of vanilla custard and also a vanilla pod are added to the batter to give the cake its wonderful vanilla flavor. The cake is not too sweet and does not taste artificially of vanilla, but has the perfect aroma.
Fruits such as apple or apricot also go very well with the cake and can be easily integrated into the recipe. White chocolate can also be combined well with vanilla cake. Here is the basic recipe.
What you need :
- 200 g flour
- 2 pck. custard powder
- 1/2 pck. baking powder
- 3 eggs
- 100 g sugar
- 1 sachet vanilla sugar
- 1 vanilla pod
- 150 g soft butter
- 1 cup of vanilla pudding (200 g)
- salt
- 200 g white chocolate coating
And this is how it works :
- put the flour, custard powder and baking powder in a bowl and mix together. Put the bowl aside for the time being.
- put the eggs, sugar, vanilla sugar, salt and the pulp of the vanilla pod (alternatively you can use vanilla flavoring) into another bowl and beat with a hand mixer until creamy.
- Now add the softened butter together with the cup of vanilla pudding and mix again briefly. If the butter is not soft enough, melt it in a saucepan or in the microwave.
- Now add the flour-vanilla custard powder mixture to the bowl. Mix the dry ingredients with the liquid batter and stir until there are no more lumps. However, do not stir too long, as the cake will lose its fluffy consistency
- Now pour the batter into a greased spring form pan or loaf tin. Bake in a preheated oven at 165 degrees C for about 40 minutes. Test the cake in between with a chopstick to see if it is ready.
- Allow the cake to cool and finally decorate with the chocolate coating. If you don’t have any chocolate coating, you can also melt white chocolate or simply use icing sugar.
