Neutral basic recipe for pancakes
You need these ingredients :
- 300 g flour
- 500 g milk
- 3 eggs
- 1 pinch of salt
This is how easy it is to prepare :
First mix the milk and eggs in a bowl, then add the salt and flour. Continue to mix well until you get a smooth, shiny dough without lumps. This works best with a food processor or, as in my case, with a hand mixer. Then leave the dough to rest for about 30 minutes.
Put the pan on the cooker and heat a dash of vegetable oil in it. Medium heat is sufficient. Now pour a ladleful of the batter evenly into the hot pan so that the bottom of the pan is covered. After about a minute, gently jiggle the pan. If the pancake moves, it is time to flip.
Experience tip: Usually the first two pancakes are not really usable. Use them as a trial to find out the optimal time and amount of oil. You can eat the “failed attempts” with a clear conscience when frying more pancakes.
