Here is a recipe for stuffed tomatoes with minced meat that is heavenly delicious and guaranteed to please everyone. The tomatoes are quick to prepare, beautifully spicy and super juicy. And the highlight: they are baked with lots of cheese.

We already know stuffed peppers and stuffed potatoes – but have you ever heard of stuffed tomatoes? If not, it’s high time you did. Because stuffed tomatoes with minced meat and onions are a real treat. They are really juicy, fresh and wonderfully hearty at the same time.

Moreover, the stuffed tomatoes are perfect for those who don’t have much time for cooking in their daily lives. The preparation time is just 15 minutes

Stuffed tomatoes: Simple recipe

Oven-baked tomatoes (perhaps with a little garlic) are delicious anyway, we think. Now imagine how it tastes with an onion and minced meat filling and topped with mozzarella cheese. So delicious!

For our stuffed tomatoes, we prepare a bed of onions, tomato paste and the pulp of the tomatoes. This can later be used as a sauce and added to the rice to round off the flavor of the dish. Here comes our recipe.

What you need :

For 2 people

  • 4-6 large tomatoes
  • 3 onions
  • 2 cloves of garlic
  • 3 tablespoons tomato paste
  • 500 g minced meat
  • Parsley
  • 100 g mozzarella, grated
  • A little butter
  • salt and pepper to season

And this is how it works :

  1. first prepare the tomatoes. First wash them, then cut off the “lid” and scoop out the tomatoes with a spoon. Put the inside of the tomato in a baking dish and place the hollowed-out tomato and the lid on a large board.
  2. Peel and chop the garlic and onion. Mix both together in a large bowl. Now add about half of the garlic and onion mixture to the tomato flesh in the baking dish. Add the tomato paste. Mix everything together with a spoon and then smooth it out. This mixture will form the bed of your stuffed tomatoes.
  3. Now add the minced meat to the onions and garlic in the bowl and mix together. Season with salt and pepper. Finely chop the parsley and add to the mince
  4. Season the hollowed tomatoes with salt and pepper and then fill with the onion and mince mixture. 5.
  5. spread the mozzarella on the tomatoes and finally put the “lid” on. Place the tomatoes on the bed of tomatoes and onions in the casserole dish and brush each with a small piece of butter
  6. bake the tomatoes in a preheated oven at 180 °C for about an hour.
  7. arrange two or three tomatoes on each plate. Serve with rice and then top the rice with the tomato and onion bed. The rice soaks up the juices from the tomatoes. So delicious!

Of course, the recipe can be modified in any way and is therefore also suitable for vegetarians and vegans. Instead of normal minced meat, you can use vegan minced meat and replace the mozzarella with a vegan sprinkled cheese.
